I know, you have probably seen hundreds of recipes glorifying the combination of smoked salmon, sour cream and dill. So why yet another smoked salmon recipe? They do go really well together, there is no question about that. Now imagine that the dill is coming from your home-grown garden… That makes it special no?
Well, I had my first dill harvest and I wanted to share this pleasing recipe with you.
Also, this recipe follows the Danish style open sandwich, which makes it even more special, as you can use pretty much any ingredient you fancy: any type of smoked fish, any pickled veggie, any micro green, any type of onion…
Ingredients
- 3 or 4 slices of smoked salmon, cut in 12 pieces
- 4 slices country bread
- 4 tablespoons sour cream
- 2 green onions, roughly sliced
- 1/4 red onion small, finely sliced
- 2 tablespoons capers
- Dill
Instructions
Slightly toast the slices of bread under the broiler. Transfer to a serving plate and set aside.
Place the smoked salmon on each slice bread then spread 1 tablespoon sour cream over the salmon.
Decorate with green onion, red onion, capers and dill.
Perfect with bubbles or a glass of chilled white wine.
