The food scene is of course one of the main attractions, and it has a lot of innovative creations to offer. I do like my classics however, and the “Salade Frisée aux Lardons” is one of my favorite dishes. I don’t understand why the frisée is not very popular in the US as it is such a delicious little salad. I love its slight hint of bitterness, its nutty flavor, and its crunchy texture. The perfect salad for an Indian summer.
There is nothing like spending a few days in Paris to recharge your batteries: art, food, fashion, architecture… everything to touch your senses. Just walking around is an amazing experience.
Ingredients
- 2 heads of frisée, roughly chopped
- 4 eggs
- 8 slices thick uncured bacon, chopped
- 8 slices of baguette or country bread, slightly toasted
- 1 clove garlic
- Dressing: 4 tablespoons olive oil, 2 tablespoons sherry vinegar, 1 teaspoon Dijon mustard, 1 crushed clove garlic, salt and pepper
Instructions
Mix all the ingredients of the dressing, and season with salt and pepper. Set aside.
Grate the slices of bread with the garlic and set aside.
Sauté the bacon in a pan on medium heat until golden but not fully crispy, about 5 minutes (these are the 'lardons'). Transfer to a paper towel and set aside.
Toss the salad with the dressing and the bacon and divide between the plates.
To poach the eggs, bring a quart salted water to a boil and crack an egg in the water. I recommend poaching one egg at a time. The egg will first spread apart but will then form a ball, after about 1 or 2 minutes. Remove the egg using a spotted spoon to drain the water. Place the egg over the salad. Repeat for each egg.
Enjoy with the garlic grated bread.
