Soba noodles are made from buckwheat flour which has an irresistible nutty flavor. This salad is very satisfying for your taste buds and very healthy at the same time. Buckwheat is known to reduce high blood pressure.
You can add all the veggies you want to the delightful dressing based on toasted sesame oil.
Ingredients
- 6 bundles soba noodles
- 2 cups green onions , chopped in 1/4-inch pieces
- 1/2 cup green onions , minced
- 1/2 cucumber, cut in julienne
- 1/2 cup chopped green cabbage
- 1/2 cup chopped red cabbage
- 1/2 cup shredded carrots
- 1/2 cup chopped coriander
- 1 tablespoon chopped jalapeno (optional)
- 3 tablespoons toasted sesame seeds
- 1 tablespoon veggie oil (avocado recommended)
- Salt and pepper
- Dressing: 1/3 cup soy sauce, 2 tablespoons rice vinegar, 3 tablespoons toasted sesame oil, 1 lime juice
Instructions
First, you need to cook the noodles. Bring a pot of water to a boil with a pinch of salt. Add the noodles and cook for 4 minutes. Then transfer to a colander and rinse with cold water for a couple minutes to remove the starch. Set aside. They you need to toast the sesame seeds. Place 1 tablespoon veggie oil in a pan on medium heat. Add the sesame seeds and toss until lightly toasted. Then transfer to paper towel and set aside. Put all the veggies (green onions, cucumber, green cabbage, red cabbage, carrots) in a large bowl with the coriander and toasted sesame seeds. Add the noodles. Mix all the ingredients of the dressing in a bowl and pour over the salad. Mix well and enjoy! You can eat the salad at room temperature or refrigerate it and let it marinate a bit in the dressing.
