The best nachos in town! Crispy and lots of flavors.
Ingredients
- 2 chicken breasts, thinly sliced
- 1 cup black olives, sliced (the best are the Kalamata)
- 1 cup black beans, drained (very important!)
- 2 cups shredded cheddar cheese
- 2 cups corn chips
- 2 cups fresh guacamole (I recommend fresh guacamole, as I have not found a decent ready-made guacamole)
- 1 cup of your favorite salsa
- 1 cup sour cream
- 2 tablespoons canola oil
- 2 cloves garlic, crushed
- 4 guerito peppers, seeded and sliced (optional if you want don't like spicy, or more if you need a big kick)
- Salt
Instructions
Heat 1 tablespoon oil in a skillet on medium heat, and sauté the chicken pieces until golden, about 10 minutes. Add a pinch of salt and stir well. In the meantime, heat 1 tablespoon oil in another skillet, and sauté the beans and garlic for 2 minutes. Add a pinch of salt and stir well. Spread the chips over a baking sheet covered with aluminum foil. Sprinkle evenly: olives, beans, chicken, guerito peppers (optional), and cheese on top. Broil for a couple minutes, until the cheese is melted and golden. Enjoy with salsa, sour cream and fresh guacamole!
