Roasted Cauliflower is simply divine! Sweet and nutty, and a bit addictive…You can eat it with literally anything. As a side dish, as a main dish, cold or warm, as a base for pasta sauce. Your imagination is the limit.
Ingredients
- 1 large cauliflower, cut into florets
- 4 tablespoons olive oil
- 1 red onion, thinly sliced
- 1 pound cherry tomatoes
- 2 cloves garlic, sliced
- 1 teaspoon thyme
- Salt and pepper
Instructions
Arrange the cauliflower, onion, garlic and tomatoes on a baking sheet covered with aluminum foil. Sprinkle with the olive oil and the thyme. Season with salt and pepper.
Broil for 10 minutes then mix and broil for another 10 minutes. You want to have some charred areas as this gives the cauliflower the nutty flavor, and the juices of the tomatoes caramelize the onion... Irresistible.
