Definitely one of my favorite recipes. Creamy, cheesy and tasty, everything you need on a bad day to lift up your spirits and awaken your senses. Add a glass of white wine to the mix and you are in heaven!
Ingredients
- 1 large cauliflower, cut into florets
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 shallots thinly chopped
- 1 tablespoon flour
- 1 1/2 cup veggie stock
- 1/2 cup milk (or heavy cream)
- 1/2 teaspoon grated nutmeg
- 1/2 cup shredded cheese (I like the Italian blend)
- 1/2 cup grated parmesan cheese
- 1/2 cup plain bread crumbs
- Salt and pepper
Instructions
Arrange the cauliflower on a baking sheet covered with aluminum foil. Sprinkle with the olive oil. Season with salt and pepper.
Broil for about 15 minutes. You want to have some charred areas as this gives the cauliflower the nutty flavor.
In the meantime, heat the butter in a saucepan on medium heat, and sauté the shallots for 5 minutes. Sprinkle the flour over the butter and stir well. Slowly add the veggie stock, then the milk (or cream), while whisking, until thickened and smooth. Add the shredded cheese and nutmeg. Season with salt and pepper and set aside.
Once the cauliflower is broiled, preheat the oven to 400F.
Transfer the cauliflower to a baking dish and pour the sauce over the cauliflower evenly.
Toss the bread crumbs and the parmesan in a bowl, and sprinkle over the cauliflower.
Bake until bubbly and golden, about 20 minutes.
