Beautiful soup with delicious flavors that will awaken your senses.
Ingredients
- 2 tablespoons unsalted butter
- 1 pound frozen peas (of course, you can use fresh peas if they are in season, and you don’t mind shelling)
- 1 medium potato, peeled and diced
- 1 onion, sliced
- 2 garlic cloves, thinly sliced
- 6 cups vegetable stock
- Salt and black pepper
- Olive oil for drizzling
- Garlic cream: 1 garlic clove crushed, pinch of salt, ½ cup heavy cream
Instructions
Heat the butter in a large pot, and sauté the potatoes, onion and garlic for 5 minutes. Season with salt and pepper.
Add the stock and cook for 20 minutes.
In the meantime, cook the peas in a bowl covered in water for 5 minutes in the microwave.
One the soup is cooked, add the peas, and puree with a hand blender or food processor until smooth. Adjust seasoning to taste.
At this point, you can refrigerate the soup to eat it cold, or you can eat it warm. Both are delicious.
Mix all ingredients of the garlic cream in a bowl and set aside.
Serve the soup with a drizzle of garlic cream and a dash of olive oil.
