Delicious pasta. You can replace the actual pasta with roasted turnips and / or celery roots.
Ingredients
- 1 cauliflower, cut in bite size chunks
- 2 tablespoons olive oil
- 1 celery root, peeled and cut in julienne
- 1 pound mushroom, washed and sliced
- 1 onion, thinly sliced
- 2 tablespoons butter
- 1 tablespoon chopped basil
- 1 tablespoon chopped parsley
- 1/4 cup heavy cream
- 2 cups of your favorite pasta (or roasted turnips and / or celery roots)
- Salt and pepper
Instructions
Arrange the cauliflower on a baking sheet covered with aluminum foil. Sprinkle with olive oil. Season with salt and pepper. Broil for 15 minutes. You want to have some charred areas. Transfer to a serving dish.
Bring a quart salted water to a boil in large pot. Cook the pasta for 10 minutes over medium heat. Drain and add to the cauliflower.
Heat the butter in a skillet and sauté the celery root, mushroom and onion for about 10 minutes. Add the herbs and cream and cook for another 2 minutes.
Top the cauliflower and pasta with the sauce and enjoy right away.
