The chickpea salad is a useful addition to any summer party. It is a very simple dish yet again very tasty due to the mere presence of the chickpeas combined with cumin, lemon, parsley and garlic.
Ingredients
- 2 cans chickpeas (14 ounces), drained and rinsed
- 1 tablespoon cumin
- 1 cup chopped parsley
- 1/2 red onion, chopped
- Salt and pepper
- Dressing: 1 lemon juice, 6 tablespoons olive oil, 2 cloves garlic crushed
Instructions
Place 1 tablespoon olive oil in a pan and add cumin. Saute for 2 minutes, until fragrant. Add chickpeas and saute for 5 minutes, mixing well.
Transfer to a bowl and add parsley and onion.
Just before serving mix all the ingredients of the dressing and season with salt and pepper. Pour over the chickpeas and mix well.
