Perfect soup for rainy days… so tasty with the lemony flavor!
Ingredients
- 1 package lentils (you can buy the already cooked ones from Trader Joe’s), or 1 cup uncooked lentils
- 1 package Swiss chard, or spinach
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 tablespoon cumin
- 1 lemon juice
- 2 tablespoons olive oil
- 4 cups veggie stock
- 4 tablespoons chopped coriander
- Salt and pepper
Instructions
Heat the olive oil in a large saucepan, and sauté the onion and garlic for about 5 minutes. Add the cumin and sauté for another 2 minutes.
Add the Swiss chard, and sauté for about 5 minutes.
Add the lentils.
Cover with veggie stock, and season with salt and pepper.
Let simmer for 20 minutes.
Add the lemon juice just before serving.
Adjust seasoning to taste.
Sprinkle with coriander.
