This is very yummy, and can be accompanied with a green salad, or a light fish. Very healthy!!! Also perfect for picnics as it does not get soggy.
Ingredients
- 1 package already cooked lentils (Trader Joe’s)
- 1 cup cherry tomatoes, diced
- 1/2 red onion, finely chopped
- 1/2 cup cornichons, sliced
- 1 tablespoon chopped basil
- 1 tablespoon olive oil
- 1 lemon juice
- Salt and pepper to taste
Instructions
Toss all ingredients in a bowl and enjoy!
