Rice Salad is definitely one of my family’s favorite dish! Our idea of comfort food. If I run out of inspiration and suggest rice salad, everyone will be delighted! It is perfect for picnics and outdoor lunches.
Ingredients
- 1 cup rice
- 2 large tomatoes (preferably heirloom), diced
- 1/2 red onion, chopped
- 1 cup black olives, pitted and chopped (kalamata preferably)
- 2 tablespoons chopped parsley
- 1 lemon juice
- 4 tablespoons olive oil
- 1 large can tuna fish (white tuna in water)
- Salt and pepper
- 1/2 cup cornichons, chopped (optional)
Instructions
In a large saucepan, bring 2 cups water to a boil. Add salt. Add the rice, bring to a boil, cover and turn off the heat. But do not remove from the heat. The rice takes about 15 minutes to cook that way. Then set aside to cool.
In the meantime, in a large salad bowl, add tomatoes, onion, olives, parsley, tuna, lemon, olive oil, cornichons if using. Stir well. Add salt and pepper to taste. When the rice is cool, add to the salad bowl and stir well. Adjust seasoning to taste.
