There is nothing like a good soup to lift your spirits and soothe your soul during those rainy days.
The veggie borscht is definitely one of the best options to make you feel better.
Ingredients
- 2 tablespoons olive oil
- 8 cups veggie stock
- 1/2 red cabbage, thinly sliced
- 4 red beets, cubed (you can buy precooked beets)
- 2 carrots, cubed
- 1 potato, cubed
- 2 tomatoes, peeled, seeded and cubed
- 1 onion, diced
- 1 laurel leaf
- Salt and pepper
- Sour cream to serve
- 1/2 cup chopped parsley
- 1 green onion, thinly sliced
Instructions
Heat the olive oil in a large pot, and sauté the onion, carrots, beets, and potato for 5 minutes. Season with salt and pepper.
Add the red cabbage, tomatoes, veggie stock, and laurel leaf. Cover and cook for about 30 minutes.
Adjust seasoning to taste then ladle the soup in large bowls, and sprinkle with parsley and green onion. Top with 1 tablespoon sour cream.
